Book Signings

Fall Fun in the Kitchen!


We love fall in our home!
This is the time to bake cookies, have yummy meals together and everyone loves to help mom in the kitchen. Every year I make a meal inside a pumpkin. The kids love to help and it tastes yummy too. Usually we have this meal on Halloween but the kids were so excited to have a pumpkin to make the "Pumpkin Surprise" so guess what we made tonight??? That's right the pumpkin surprise. You will find this recipe on page 85 in the cookbook.
Here is the recipe:

1 medium pumpkin
1 pound hamburger
1 cup onion, chopped
1 cup green pepper, chopped
2 cups rice
2 cups water
1 cup chicken or beef broth (gluten free)

Clean out a pumpkin and bake at 350 degrees for 25 minutes. Brown hamburger, onion and green pepper. Add rice, water and broth and simmer, covered for 20 minutes. Put mixture in pumpkin and bake at 350 degrees for 30-45 minutes.
